Arugula and Cherry Salad Yield: One Salad
- 2 1/2 oz. Arugula, baby
- 2 oz. Grande Fumella Smoked Mozzarella
- 1 oz. Cherries, dried
- 5 oz. Chicken breast, grilled
- 2 oz. Bacon Dressing, warm (see recipe)
Directions
Arugula and Cherry Salad
- Combine 2 1/2 oz. arugula, 2 oz. Grande Fumella, and 1 oz. dried cherries in a bowl and toss to blend.
- Transfer to salad plate or bowl.
- Add 5 oz. grilled chicken and serve with 2 oz. warm bacon dressing.

Bacon Dressing Yield: One Salad
- 3 tbsp. Apple cider vinegar
- 1 1/2 tsp. Honey
- 1/2 tsp. Dijon mustard
- 4 oz. Bacon, pieces
Directions
Bacon Dressing
- Put 3 tbsp. apple cider vinegar, 1 1/2 tsp. honey, 1/2 tsp. Dijon mustard and 4 oz. bacon in a blender and mix until smooth.
- Store in a squeeze bottle.
